Mushroom Kaju Dhingri

Mushroom Kaju Dhingri is a lip smacking recipe which taste with Indian spices, rich and creamy 

Ingredients:-

400gm fresh mushrooms
15 cashew nuts
2 onions sliced
1 tsp ginger paste
1 tsp garlic paste
4 green chillies chopped
1tsp cumin seeds
1 tsp ground black pepper
1 tsp garam masala powder
1 tblespn coriander powder
1 tsp cumin powder
1 tblespn kasuri methi(optional)
salt to taste
1/2 cup fresh cream
1/2 cup melted butter

Preparation

Add melt butter approximately 2 tablespoon
Add mushrooms with ground black pepper
Saute on high heat for 5 to 10min without stirring till most of the water released from mushrooms evaporates n keep aside

Melt 1 tblespn butter n add cumin seeds
Add the chopped onions, cashew nuts n saute till both turn into golden brown
Grind it into a smooth paste

Melt approximately 1 to 2tblespn of butter and saute ginger, garlic paste till brown
Add coriander, cumin powder n stir for a min
Add the onion n cashew paste stir for few min till the spices blend into the paste
Add 2 cups of water and continue to stir on low heat

Add kasoori methi, salt n green chilies
Add garam masala powder with 2 cup or more water to make curry as per desired consistency

Simmer on low heat for 7 to 10minutes and then add the cooked mushrooms
Add cream n mix well and bring to boil on high heat
Lower the heat n simmer for few more minutes till a thin layer oil start to float on top

Serve hot with roti, naan or chapati
