Dhokla

Dhokla is Gujarati snacks which we all like this very much Dhokla Ingredients:- 2 cups Gram flour (besan) 1 cup Yogurt beaten Salt to taste Turmeric powder 1/2 teaspoon Green chilli-ginger paste 1 teaspoon Oil 2 tablespoons Lemon juice 2 tablespoon Soda bicarbonate 1 teaspoon Mustard seeds 1 teaspoon curry leaves 7 8 green chillies 4 5 (cut into 2) 1/4 cup water Fresh coriander leaves chopped 2 tablespoons Method:- Step 1 Take gram flour in a bowl. Add yogurt and approximately one cup of warm water and mix. Avoid lumps. Add salt and mix again. Step 2 Leave it aside to ferment for half an hour. When gram flour mixture has fermented, add turmeric powder and green chilli-ginger paste. Mix Heat the steamer. Grease a thali. Step 3 In a small bowl take lemon juice, soda bicarbonate, one teaspoon of oil and mix. Add it to the batter and whisk briskly. Pour batter into the greased thali and place it in the steamer. Kheer recipe ingredients 2 tablespoon rice (soaked for 2 hour) 1 1/2 litre milk 4 5 tablespoons sugar 10 cashewnut chopped 10 almonds peeled n sliced 3 green cardamom 1/3 cup pure ghee kesar 1 pinch Method heat ghee in deep wok crackle green cardamom  in it add the soaked rice n roast it on medium flame Add milk in it n let them cook for half n hour on low flame n keep stirring in between rice should not b sticky into the bottom of wok Add dry fruits in it n let them cook n keep stirring Add sugar n cook till the portion of milk reduce 1/4  Hand blend the kheer garnish with kesar n serve chill

Mutton Biryani ingredients:; Mutton cut into 2 inch pieces on the bone 500 grams 500grams basmati rice cooked 3 onion sliced 4 tomato chopped 1 onion fried in ghee 5 6 tablespoon ghee 4 5 Black cardamoms Black peppercorns 4 5Green cardamoms 5-6 Cloves 3-4Green chillies slit 1 tablespoon Ginger paste 1 tablespoon garlic paste Biryani  masala (I used everest shahi biryani masala) 1 teaspoon Red chilli powder 1/2 teaspoon Turmeric powder 1/4 teaspoon Green cardamom powder 1/2 teaspoon Garam masala powder Salt to taste 9 10 cashews fried fresh coriander leaves Method Step 1 Heat ghee in a pressure cooker. Coconut Rice is one of the simplest rice preparations from south India. In this recipe, we make a quick seasoning and roast the grated coconut. The more coconut you add, the more flavorful the rice will be. It goes well with any side dish. It is perfect for lunch box and even to serve for unexpected guests. Ingredients Cooked rice - 1 cup Grated coconut - 3/4 cup For Tempering Oil (preferably coconut oil) - 1 tbsp Mustard seeds - 1 tsp Channa dal - 1 tbsp Urad dal - 1 tbsp Cashew nuts - 6-8 Red chillies 2 Green chillies - 2 (optional) Curry leaves - 1 sprig Asafoetida a pinch Method Cook the rice such that each grains are separate. About this recipe lauki also known as bottle gourd or opo squash is used in indian cuisine in various ways. lauki is also called as dudhi (marathi and gujarati). This is healthy fried recipe which is cooked on tawa pan with flavorful spices. Ingredients for Fried Bottleguard 1 whole bottle gourd Salt to taste 1 teaspoon red chili powder 1 teaspoon coriander powder 1 teaspoon turmeric powder 1 teaspoon mango powder 1/2 teaspoon chat masala powder 1/2 teaspoon garam masala powder 1/4 cup oil How to cook Fried Bottleguard Peel bottle hours and sliced it into 2inch pieces. Heat oil on nonstick pan. Place pieces in heated oil sprinkle salt n rub it fry for 2minutes on high flame. Sprinkle 1/2 teaspoon all spices on all over pieces. Cook till it done golden brown. Lahsooni Palak Dal Preparation Time : 6-7 mins Cooking Time : 25 mins Servings : 4 Ingredients : Tuvar Dal / Arhar Dal - 1 cup Palak / Spinach - 500 gms (chopped) Ginger paste - 1 tsp Garlic paste - 1 tsp Tomatoes - 4 (chopped) Turmeric powder - 1 tsp Salt - as needed For tempering : Ghee or Refined Oil - 2 tbsp Garlic - 5 pods (chopped) Mustard seeds - 1 tsp Hing / Asafoetida - 1 pinch Red chili powder - 1/2 tsp Direction & Method : 1. Besan Methi Paratha ingredients Fenugreek leaves 1 cup whole wheat flour 2 cups gram flour 1 cup 2green chillies garlic 1 teaspoon salt to taste 1/4 teaspoon turmeric powder 1/4 teaspoon ajwain oil/ghee for paratha 1/2 cup water Method Rinse  methi leaves very well in water. drain them completely. Chop the methi leaves finely and keep aside in a bowl Add whole wheat flour, gram flour, salt,  turmeric powder n ajwain. Then add the chopped methi leaves, finely chopped green chilies,  finely chopped garlic and 2 tsp oil. pour water in it, first mix and then start kneading the dough. After kneading make medium sized balls of the dough n dust the dough ball with some flour and then start rolling the methi paratha. roll the dough into medium sized roti sorrounds.  Place the methi paratha on a hot tawa and fry till it get brown spot on paratha.
