Sabzi ki bahar/Mix Vegetables Sabzi
The rich, strong aroma and irresistible taste of this Mixed Vegetable Sabzi will make you addicted to it!
A gravy of tomatoes, onions and spices forms the base of this marvelous creation, which features a horde of colourful and juicy veggies, which are sauteed separately in oil and then added to the gravy to enhance their flavour and get a distinct texture.
Ingredients:-
150gm cauliflower pieces
150gm cottage cheese (paneer cut into small pieces)
2 potatoes (cut into small pieces)
1 cup green peas
1 cup carrot (cut into inches)
1 large onion sliced
2 medium size tomato
1 inch ginger piece
7 garlic pods
Salt as per taste
1 teaspoon kashmiri red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1 tablespoon dried Fenugreek leaves (kasuri methi)
2nos dried red chilli
2 clove
1 green cardamom
1 big cardamom
1 inch cinnamon
1 bayleaf
5nos black pepper corns
1 teaspoon cumin seeds
5 tablespoons cooking oil
3 tablespoons chopped coriander leaves
Method:-
Heat oil in deep kadhai fry onion till it change into light brown. Transfer it in plate and let it cool on room temperature.
In same oil cook separate cauliflower, potatoes and paneer for 2minutes on low high flame and transfer all veggies in 1 plate. (Fry Potatoes for 2minutes 1/2 done)
Grind into fine paste (fried onion with tomato, ginger and garlic.)
In same oil we will add whole spices (cumin seeds, clove, cinnamon, green cardamom, big cardamom, beayleaf, dried red chili and black pepper corns when spices stop spluttering, add fine paste and
Cook till oil starts floating on all over masala in between keep stirring.
Add salt, red chili powder, coriander powder, turmeric powder, garam masala powder and kasuri methi n keep stirring till it done )bhunno.
Add green peas n carrot with 4 tablespoons water. Cover the lid n cook for 5minutes on low flame.
Add fried cauliflower, potatoes, paneer, mix it well. Cover the lid n again cook for 5minutes or it done.
Add coriander leaves n mix it. Switch off the flame.
Serve hot with chapati or tandoori roti. Ready to eat.
