Groundnut Garlic Chutney

This is a dry textured chutney prepared from groundnut, garlic, dry coconut and spices. This chutney is so widely used in Maharashtra for making vada pavs.

8 garlic cloves
1/2 cup grated coconut
1 tablespoon sesame seeds
2 tablespoons roasted groundnuts
2 teaspoon kashmiri red chilli powder
1/2 teaspoon tamarind paste
Salt to taste
1 teaspoon cooking oil

Method:-

Heat oil in pan, roast garlic cloves for minute on low flame. Transfer it to a plate.

Dry roast grated coconut in same pan on low flame until light brown. Transfer it to a plate.

Dry roast sesame seeds in same pan until seeds start to pop. Let all the roasted ingredients cool down for 10minutes at room temperature.

Take roasted garlic, groundnuts, coconut, sesame seeds, kashmiri red chili powder, tamarind paste and salt in mixer jar.

Grind them until medium coarse powder.

Chutney is ready. Transfer it an airtight jar. You can store this for 15days. Use it as a spread for preparing vada pav, dosa, paratha.... I like to serve this delicious chutney with aloo paratha also by adding curd in chutney.
