Schezwan Potatoes
Schezwan potatoes are a delectable, hot and tangy Indo-Chinese dish. fried baby potatoes golden brown, tossed in a fiery, homemade Schezwan sauce, and then serve. This is a quick, simple meal.

Schezwan baby potato/Indo chinese schezwan baby potato
Ingredients:-
16 nos boiled n peeled baby potatoes
1 onion roughly chopped
1 capsicum roughly chopped
3 tablespoons chopped spring onion
2 dried red chilies roughly chopped
3 tablespoons homemade schezwan sauce
salt as per taste
1 tablespoon oil
Ingredients for schezwan sauce:-
Schezwan Sauce
20 kashmiri red chillies (soak in boiled water for half an hour)
3 tablespoon ginger paste
2 tablespoon garlic paste
salt to taste
1 teaspoon Ajinomoto
1 teaspoon soya sauce
1 teaspoon vinegar
1 teaspoon sugar
1 star arise crushed
1 pinch orange red color
1/2 cup oil
First we will prepare homemade schezwan sauce.
Make fine paste of Kashmiri red chillies add vinegar in it when grinding
Heat oil in pan
Add ginger garlic paste n saute well for 8 to 10 min on low flame
Add red chilly paste n salt in it n saute well
Add soy sauce, ajinomoto, sugar, food color n star arise saute well, cook till oil separates.switchoff the flame, cool it down on room temperature
Store it in tight jar n in refrigerator
you can use it for dosa, Indo Chinese foods, sandwiches etc
Suggestion:- do not add color if u want to store it for long time
Method:-
Heat oil in wok add onion in it n sauce till it turn soft.
Add capsicum n saute for 3 minutes on low flame.
Add boiled baby potatoes n salt in it n cook it on high flame for minute, keep sauteing.
Add schezwan sauce n mix it well cook it for 2 to 3 minutes on low flame, add half spring onion in it mix well switch off the flame.
garnish it with remaining spring onion.
