Bhuna Gosht Ka Salan


What makes this mutton special the word "bhuna". Gosht Ka Salan cooked in bawarchi style. First 80% mutton boiled with roughly sliced onion and some spices. After that we start adding spices one by one and keep sauteing until mutton dry n smell aromatic. This process take 10 to 15minutes. This salan can be paired with plain roti, paratha, naan or rice.

Ingredients:-

500gram Mutton
2 large Onion roughly sliced
1 tblspn Ginger Garlic paste
5 tblespn Coriander Leaves chopped
Salt as per taste
1 tsp Red Chili Powder
1 tsp Coriander Powder
1/2 tsp Turmeric Powder
1/2 tsp Garam Masala Powder
1/2 cup Oil
Whole Spices:-
2 Bay Leaf
2 Clove
2 Green Cardamom
2 inches Cinnamon stick
1 Mace
1 Star Anise small piece
8-10 Black Pepper

Method:-

Wash mutton well in running water.

Heat oil in pressure cooker. Add onion, mutton, turmeric powder, salt and 2 cup water.

Cover the lid and pressure cook it on 3whistles. Do not overcook mutton just boil it or  80% mutton cooked.

Add ginger garlic paste in boiled mutton, cover n cook it on high flame for 3minutes.

Add whole spices, mix it.

Now add red chilli powder and saute on high flame for 2 to 3minutes.

Add coriander leaves, mix it well.

Add garam masala powder and keep sauteing on high heat.

Add coriander powder, saute about 3minutes.

Add 2 to 3 cups of water and pressure cook on 2whistles. Add water as you need consistency of mutton gravy.

Do not open lid immediately let the air release from pressure cooker.

Bhuna Gosht Ka Salan ready to serve. Serve hot this with roti, paratha, naan or rice.
