Quick Meal

Thali for 2person

Veg Thali loaded with masala dal, chapati, rice, boondi raita, aamras, brinjal fried, onion chutney and green chutney. This quick meal prepared in very less time.

Masala dal

250gm tur dal
1 onion finely chopped
1 tomato finely chopped
1 teaspoon ginger garlic paste
2 green chilies finely chopped
Some curry leaves
A pinch of asaefotida
Salt to taste
1/3 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1/2 teaspoon dal fry masala powder (available in market)
Some chopped coriander leaves
5 tablespoons cooking oil

Method:-

Soaked  tur dal for 30minutes. Pressure cook it on 3whistles with required water, salt and  turmeric powder.

Heat cooking oil in wok, crackle cumin seeds, mustards seeds, curry leaves and asafetida. When seeds stop crackling.

Add onion n cook till it turn into light brown.

Add ginger garlic paste n saute for 30seconds on medium flame.

Add tomatoes, green chilies, red chili powder, coriander powder, garam masala powder and dal fry masala powder. Mix really well n cook till oil start floating on all over masala.

Add coriander leaves and mix it.

Add boiled dal in it n mix really well. If required then add little water n cover the lid cook for 3 to 5minutes on low flame.

Dal is ready keep aside.

Brinjal Tawa Fried:-

1 large size brinjal (cut into long strips)
Salt to taste
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
1/4 teaspoon garam masala powder
1/2 teaspoon cumin powder
1/4 teaspoon turmeric powder
1 teaspoon mango powder
3 tablespoons cooking oil

Method:-

Heat oil on nonstick pan, shallow fry brinjal strips when bhinmal get little soft.

Sprinkle salt, red chili powder, coriander powder, garam masala powder, cumin powder, turmeric powder and mango powder on all over brinjal n cook till it done. Transfer it to a plate.

Boondi Raita

Ingredients

2cups fresh curd
1 cup crispy boondi
Salt to taste
A pinch of red chilli powder

Mix curd, boondi and salt well keep aside. Whenever serve don't forget to sprinkle red chili powder on it.

Onion chutney
Ingredients for Onion Chutney

2 large onion finely chopped
1 cups tamarind water
2 dried red chilies chopped
Some curry leaves Salt to taste
1/4 tspn Black pepper powder
1/2 teaspoon mustard seeds
2 garlic pods finely chopped
2 tablespoon cooking oil

Method:-

Heat oil in wok crackle mustard seeds, curry leaves when it stop crackling add garlic n dried red chilies and saute for 30seconds.

Add onion n saute till onion get pink in color. Add salt n black pepper powder. Mix it well.

Add tamarind water n bring it to boil. Switch off the flame.

Onion chutney is ready to serve.

Aamras, rice and chapati we all know how to prepare.
