Galka/Turai Ingredients:- 1kg galka peel n sliced (turai) 5 nos green chilies chopped (hari mirch) Salt as per taste (namak) 1 teaspoon turmeric powder 1 teaspoon cumin seeds (zeera) 1 pinch asaefotida (hing) 1/2 cup cooking Oil Method:- Heat oil in deep wok crackle cumin seeds, asaefotida n green chillies Add galka in it cook it on high flame for 10mins n then saute Add turmeric n salt mix it well n again cook it on high flame till the galka get dry

It is a healthy shallow fried cutlets, vegan, no onion no garlic recipe, great finger food for kids. It can be kept inside a burger bun or eaten as it is with tomato ketchup. Ingredients:- Moong sprouts 1 tablespoon Green peas 1 tablespoon Chickpea 1 tablespoon 3 boiled potatoes Salt as taste Red chili powder 1 teaspoon Turmeric powder 1/2 teaspoon Green chili no 2 chopped Fresh coriander leaves chopped Oil for shallow fry 1 beaten egg Method:- Boil sprouts for 3 to 4 minutes Mix all ingredients except oil n egg Make balls and press it with the help of palm shape round to the mixture balls. Heat oil in nonstick pan deep tikkis in egg n shallow fry all tikkis from both side Serve hot with chutney

Bhuni kaleji Absolutely delicious recipe of bhuni kaleji/dry liver which cooked in spices. I guarantee that u will love it. Ingredients 500gm liver 1 large onion sliced 1 tomato sliced 2 green chilies chopped 1 tablespoon ginger garlic paste Salt as per taste 1 teaspoon red chilli powder 1 teaspoon garam masala powder 1 teaspoon turmeric powder 1 tablespoon coriander powder 1 tablespoon mutton masala powder 3 tablespoons cooking oil Coriander leaves for garnish Method Cut liver into small pieces Heat oil in pressure cooker add onion n cooked till it change the color in brown. Add ginger garlic paste n saute for 2 to 3minutes Now add tomato and green chili mix well put salt, red chili powder, coriander powder, garam masala powder, turmeric powder, mutton masala n mix well, if req then add little  water Add liver in masala n mix it well Cover lid n cook on 7 to 8 whistles on low high flame Garnish coriander leaves n serve hot with chapati, rice or pav

Brain Egg Fry Brain egg fry is in restaurant style Easy to cook in just few steps Ingredients:- 1 whole brain 1 beaten egg Salt as per taste 1 teaspoon chili paste 1 cup water Breadcrumbs A pinch chat masala Oil required for deep fry Method:- Clean n wash brain n then boil it Heat oil in deep wok Add salt, chili paste in egg and mix well. Now take boiled brain deep in beaten egg n coat with breadcrumb. Put it in heated oil n fry on low flame till the color change in brown Serve hot with salad and sprinkle chat masala. Ty for reading

Mutton chap fry/ Mutton chop fry Chaap Fry Recipe - Mutton chops cooked in aromatic spices, dipped in egg batter and breadcrumbs and deep fried. Ingredients 500gm Mutton chops 2 beaten eggs 1 cup breadcrumb 1 tablespoon ginger garlic paste Salt as per taste 1 teaspoon cumin powder 1 teaspoon red chili powder 1 teaspoon black pepper powder 1 teaspoon coriander  powder 1 teaspoon garam masala powder 2 cups water 1 pinch chat masala Fresh coriander leaves for garnish Oil required for fry Method Mix ingredients mutton chop, water, ginger garlic paste, salt, red chili powder, coriander powder, cumin powder, black pepper powder, garam masala powder bring it to boil till water dry. Heat oil in deep wok, coat each mutton chop  with eggs n breadcrumbs Put it in heated oil n fry till it become brown in color, replace it in paper towel. Serve hot with salad and green chutney. Garnish coriander leaves and sprinkle chat masala on fried mutton chops.

I use boneless chicken breast  as they cook really quick and stay moist. Finished with a pinch of chaat masala it is delicious served with a green chutney Ingredients 500gm boneless chicken pieces 1 cup hung curd 1 teaspoon ginger paste 1 teaspoon garlic paste Salt as per taste 1 teaspoon red chilli powder 1 teaspoon white pepper powder 1 teaspoon garam masala powder 3 tablespoons butter 1 pinch chat masala for garnish Coriander leaves for garnish Method Marinate all ingredients except butter, chat masala and coriander leaves Refrigerate for an hour Soak skewers in water for 30minutes Coat skewers with butter n set 4 5nos of marinated chicken pieces Heat butter in nonstick pan and shallow fry chicken malai tikka  for 15mins from all the sides Garnish with coriander leaves n sprinkle chat masala Serve hot...

Goat Tripe/Baqre ki ojhri Ojri/Ojhri Curry is a low cost dish liked by many people. It is very Delicious and tasty. Ingredients:- Ojri (mutton)   1 Onion  3 Ginger paste 1 teaspoon Garlic paste 1 teaspoon Tomatoes chopped  2 Green chilies 2 Oil 3 tablespoon Fresh Coriander leaves for garnish Salt as per taste Red chilli powder 1 teaspoon Mutton masala powder 1 teaspoon Turmeric powder 1 teaspoon Coriander powder 2 teaspoon Garam Masala powder 1 teaspoon Procedure: Throughly clean and wash Ojri with water and boil it 2 times for each ten minutes Well cleaned and cut it into pieces. Now grind  all ingredients in grind mixer except fresh coriander leaves. Heat oil in pressure cooker add paste in it n cook on low flame for 5minutes. Surmai fish fry/King fish fry Ingredients:- 1 kg king fish wash n clean (cut into small pieces) 1 teaspoon peppercorns 1 tablespoon coriander seeds 1 teaspoon cumin seeds 1 teaspoon mustard seeds 1/2 teaspoon fennel seeds 1 pinch fenugreek seeds 10 12 nos dry red chillies Salt 1 teaspoon or as per taste 1 teaspoon red chili powder 1 teaspoon garam masala powder 1 lemon juice Oil  required for fry + 3tablespoons oil Method:- In pan roast coriander seeds, cumin seeds, peppercorns, mustard seeds, fennel seeds, fenugreek seeds n dry red chillies and grind it In the mixture add salt, red chili powder, garam masala oil and lemon juice mix well Take fish in large mixing bowl add mixture n mix well Keep marinated fish in refrigerator for an hour Heat 4 to 5 tablespoons of oil in nonsticky pan n put fish pieces cover the lid n fry it for 7  to 8mins from both the sides
