Mint Chicken Mole
Method with ingredients:-
Take 2 pieces of chicken breast seasoning it with some salt and shallow fry in heated oil till it done
Heat 3tablespoons cooking oil add onion and saute for 3minutes on low flame.
Add
1-1teaspoon ginger garlic paste and saute for another 3minutes on low flame.
Add finely chopped 1 cup red and yellow bell pepper, salt as per taste, 1 teaspoon chicken masala powder, 1 teaspoon red chili powder, 1 teaspoon garam masala powder, 1/4 teaspoon turmeric powder and 1 teaspoon black pepper powder, mix it n cook for 3-5minutes.
Add 1&1/2 glass chicken broth n cook till oil starts floating on all over gravy.
Add 1/2 cup bitter sweet chocolate (dark chocolate), mix it well till dark chocolate melt. Switch off the flame and let the gravy cool down on room temperature and grind it into fine puree.
Heat 2 tablespoons cooking oil splutter 1 teaspoon cumin seeds and add cube sized red and yellow bell pepper n saute for 2minutes on high flame.
Add puree (prepared earlier) n saute for minute on low flame.
Add 1 teaspoon mint powder n mix it well.
Add fried chicken breast. Cover the lid and cook for 5minutes on low flame.
Mint Chicken Mole ready to eat. Serve this with tandoori roti, chapati, naan, kulcha etc
