Veg Pulao

Vegetable Pulao (Veg Pulav) is a spicy rice dish prepared by cooking rice with various vegetables and spices

Ingredients:-

400gm basmati rice (boiled with salt as per taste)
1 large onion sliced
1 teaspoon ginger paste
1 teaspoon garlic paste
1 large tomato chopped
1 large capsicum cut into cube size
1 cup green peas
1 cup beans cut into 1 inches
1 tablespoon crushed kasuri methi/dried fenugreek leaves
1 potato boiled n cut into small pieces
2 green chili roughly chopped
1 strip curry leaves
1 teaspoon cumin seeds
1 teaspoon red chilli powder
1 tablespoon coriander powder
1 teaspoon turmeric powder
1 teaspoon all spices powder
1 large pinch of salt
1 tablespoon everest sabzi masala powder
1/2 cup cooking Oil
2 tablespoons chopped coriander leaves

Method:-

Heat oil in deep wok,  add cumin seeds when it crackle  add onion n saute till get soft
Add garlic, ginger, curry leaves and green chili let time cook until it become light brown
Add tomato, salt, red chili powder, turmeric powder, coriander powder, all spices powder, everest sabzi masala powder and mix it well
Now add vegetables ( green peas, beans, capsicum, potato and kasuri methi) mix it with masala, if required then add little water, cover the lid n cook it for 3min on low flame
Finally add boiled  rice and 1 1/2 tablespoons  coriander leaves in the same wok and mix it well that the masala coat to the rice
Cover the lid n cook it on low flame for 3minutes.
Serve hot in plate with veg raita, buttermilk and papad and garnish coriander leaves on all over veg pulao
